Tasting Notes: This wine in this vintage is a beauty. Not a fan of "Chardonnay?" This wine has none of the flavors you dislike, we promise. It's complex, partially fermented in old barrels with just a hint of new wood. The 2018 Guillaume Chardonnay shows itself as being so Burgundian (though I cringe to use the word, it's very appropriate here) that you'd swear it from the village of Chaintré, or perhaps an exceptionally clean Jura Chardonnay made in the ouillé style (topped-off and non-oxidative). Flinty citrus and golden fruit lead the way into an exuberant, juicy palate with white peach and lemon confit.
Pairing: Oh my gosh, this wine is such an stunner to enjoy with food. If you’re feeling indulgent, you’ve got to try it with Gougères with Pancetta and Sage by Melissa Clark.
The Guillaume family is one of the leading plant nursery owners in Europe, providing grafts to most of the top wineries in Burgundy, Champagne, Piedmont, and Tuscany. Their 43 hectares of vineyards are located just 40 kilometers east of Burgundy’s famous Cote de Nuits between Gy and Charcenne. The vines are rigorously tended, emphasizing maximum exposure and low yields.
