Tasting Notes: A wonderful, velvety Bordeaux that has a pretty young garnet color. The nose is distinctive and alluring, with ripe forest fruit aromas backed by floral notes and spices. Attractive pure black cherry and plum flavors on the palate boasting delicious freshness and fruit balance. Soft, supple, smooth tannins, with a long finish.
Pairing: I know this would pair beautifully with a juicy steak or grilled portobello mushrooms, but I’m honestly feeling like this would be a hit with a Barbecue Chicken Pizza (you could also totally make barbecue portobello mushrooms for a vegetarian option). Hear me out, those velvety plum and cassis notes are reminiscent of certain aspects of barbecue sauce, add on some cheese, chicken, and carmelized onions and you’ve got yourself an umami-rich sweet, savory, and flavor explosion.
About. Gilles Gremen is a fourth-generation owner of Château Tour de Biot on the right-bank in the commune of La Roquille. When he took over in 1987, he set about to increase the quality of his wine. He broke from the local co-operative and started bottling under the chateau label. His wine is distinctive for its velvety texture.
