Tasting Notes

Dry, and fresh white wine with notes of white flowers, citrus fruit, and minerality. It also exhibits hints of the sea, lemon, and flintiness, along with floral and fruity aromas, including honey and hay.

Food Pairing

This skin-contact style of Fiano’s textured grip, and layered stone-fruit aromatics make it especially versatile with bold, rustic, and spice-inflected dishes. Its combination of gentle tannin, herbal complexity, and preserved-citrus intensity complements earthy ingredients and dishes with roasted or smoky elements, while the wine’s savory edge stands up well to richer plant-based or Mediterranean preparations. The style pairs best with grilled vegetables, olive-oil-driven plates, aromatic spices, and hearty seafood or poultry where texture and umami mirror the wine’s depth.

About the Producer

Founded in 2010 by agronomist Francesco Valentino and run today with his family, L’Archetipo farms about 20 hectares in Salento using a pioneering form of “synergistic agriculture” that blends organic, biodynamic, and regenerative practices. The estate specializes in indigenous Puglian varieties such as Primitivo, Negroamaro, Aglianico, Fiano, and Greco Bianco, producing expressive reds, vibrant whites, and characterful skin-contact wines. With native-yeast fermentations, minimal sulphur, and a low-intervention approach, the Valentinos craft wines that are pure, textural, and deeply rooted in their iron-rich southern Italian terroir.
