Varietal: 40% Sauvignon Blanc, 20% Sauvignon Gris, 20% Semillon, 20% Muscadelle
Founded in the 13th century, this chateau sits in the heart of Entre-Deux-Mers. The winery owns 121 acres of land, of which 49 are dedicated to vines. The remaining land is managed to create biodiversity. Beginning a few years ago, the winery has also begun the process of converting to organics. This wine is a classic expression of stainless steel fermented white Bordeaux. Stone and citrus fruits abound in the glass and the little bit of time on the lees gives the wine extra texture and mouthfeel.
Pairing: This is the perfect patio sipper. It also pairs wonderfully tangy goat and sheep chases as well as creatures that live in shells.
