Taste: Pale gold in the glass with glints of silver. The nose opens with crisp pear, white peach, and lemon zest, followed by aromas of fresh hay, wet stone, and a faint beeswax note. On the palate - it is linear and driven, with high acidity wrapping around flavors of green apple, quince, and crushed limestone.
Pairing: Dry Vouvray pairs well with high salinity, delicate aromatics, or subtle fat. Bright acidity works best with lightly creamy, citrus-tinged, or briny preparations. Shellfish and white fish are classic pairings, especially when poached or grilled with lemon and herbs. Try Loire river fish like trout or pike in beurre blanc for a regional nod.
About: Christophe Thorigny operates his domaine in the commune of Cravant-les-Coteaux, within the heart of the Chinon AOC in France’s Loire Valley. This region, particularly known for its limestone plateaus and gently undulating slopes, plays an essential role in shaping the expression of Cabernet Franc, locally known as Breton, that defines the wines of Chinon. The estate, which has been in the Thorigny family since the 1950s, has evolved through three generations and continues under Christophe’s leadership.
