Description
From: Cravant-les-Coteaux, Vouvray, Loire Valley, France
Varietal: Chenin Blanc
Taste: Pale straw with a fine bead and persistent mousse. The nose opens with white flowers, lemon peel, and crisp green apple, followed by hints of almond, brioche, and chalk dust. The wine is brisk and focused on the palate, delivering flavors of pear skin, lime zest, and crushed stone.
Pairing: Vouvray Brut’s pair well with dishes that feature delicate textures or salty, crispy components. It’s a natural match for oysters on the half shell, gougères, and pan-fried white fish. The wine also pairs well with Japanese fare—think sashimi, shrimp tempura, or sea bream with ponzu—where its clarity and fizz accentuate freshness and umami.
About: Christophe Thorigny operates his domaine in the commune of Cravant-les-Coteaux, within the heart of the Chinon AOC in France’s Loire Valley. This region, particularly known for its limestone plateaus and gently undulating slopes, plays an essential role in shaping the expression of Cabernet Franc, locally known as Breton, that defines the wines of Chinon. The estate, which has been in the Thorigny family since the 1950s, has evolved through three generations and continues under Christophe’s leadership.
