Taste: In the glass, the 2022 vintage is pale gold with green highlights. Aromas lead with lemon peel, green apple, and acacia flower, followed by deeper notes of almond skin, crushed stone, and subtle smoke from oak aging. The palate is precise and driven, showing a linear core of citrus and orchard fruit layered over saline tension over a velvety textured mid-palate. A gentle toastiness and a chalky texture guide the wine toward a long, mineral finish marked by white peach and flint.
Pairing: This Saint-Romain Blanc’s freshness and structure make it a versatile match for dishes that emphasize brightness, texture, and a balance of richness and acidity. Begin with simple, clean seafood or poultry like pan-seared halibut or trout, seared scallops, and roasted chicken all highlight the wine’s citrus and mineral tones while complementing its subtle leesy roundness.
About. Maison Ambroise is located in Prémeaux-Prissey, a small village just south of Nuits-Saint-Georges in the Côte de Nuits. The domaine was founded in 1987 when Bertrand Ambroise took over vineyard holdings from his father-in-law, René Fleurot, and began bottling under his name. Bertrand quickly expanded the estate’s reach while steadily increasing quality and gaining a reputation for full-bodied, age-worthy wines across both the Côte de Nuits and Côte de Beaune.
The estate currently farms about 17 hectares, ranging from regional appellations up through Premier and Grand Cru sites. Bertrand was joined by his son, François, in the early 2000s, and the domaine transitioned to “Bertrand & François Ambroise” in name while retaining the original branding for many export markets. François Ambroise now leads the winemaking and viticulture. His approach has maintained the domaine’s muscular house style while refining extraction and elevating finesse, especially in recent vintages.
