Varietals: White Granache, Macabeo, Pedro Ximénez
Tasting Notes: A crystalline amber color with brown and orange tones and gold/copper-like reflections typical of barrel aging. Strong, foresty Mediterranean aromas like fennel, and rosemary with cumin and notes of cinnamon and vanilla. Secondary aromas of aged wood, the earth just after a rain, truffle, and honey emerge with more sipping. Notes of phosphorus and minerals that reflect the origin of the grape from slate land. Balsamic and spicy touches. On the palate, it is balanced, with just enough sweetness to complement the accompanying bitter citrus.
Pairing: Always drink it cold. It can be drunk neat or with some ice cubes and an orange or lemon piece of fruit inside. Ideal with slightly salty or savory foods. However, traditional accompaniments from this region are olives, nuts, and clams. It is also great with fish or seafood. Or, if you have a sweet tooth, you can drink our vermouth as a dessert together with a chocolate cake.
Method: "Our vermouth has been made following the artisan tradition from our region. With a base of Priorat white wine and macerated with more than 100 aromatic herbs. Aged in barrels for a minimum of two years, to obtain amber-colored vermouth, with toasted notes that make it more elegant and balanced."
