From: Sancerre, Loire Valley, France
Varietal: Pinot Noir
Taste: This wine is a vibrant ruby red with transparent edges. Aromatically, the nose opens with wild red cherries, fresh raspberries, and red currants, layered with crushed violets, white pepper, and subtle notes of forest floor. On the palate, the wine is lifted and precise, driven by high-toned acidity and fine, lightly grippy tannins.
Pairing: Pinot Noir from Sancerre, especially in a lighter, mineral-driven expression like Osmoze, performs best with dishes that echo its structure of bright acidity, modest tannins, and earthy undertones. Consider ingredients that offer umami, gentle smoke, or herbal notes. Roast chicken with rosemary and garlic, lentil and mushroom stew, or duck breast with a cherry gastrique all complement the wine’s savory and red-fruited profile.
About: Domaine Jennifer et Thibauld Denizot is based in Verdigny, a village located just northwest of Sancerre in the Loire Valley. The family’s initial plantings were established in the early 20th century by Thibauld’s great‑grandfather. Though the domaine in its current form is relatively new, the family has worked these vineyards for eight generations, with Thibauld and Jennifer representing a new chapter for the estate. Over the decades, the estate remained relatively modest until recent years. Over the decades, the estate remained relatively modest until recent years.
