Taste: Ruby-hued in the glass. Opens with aromas of tart red fruit, enticing black cherry, and plum reduction, followed by subtle hints of black currant and forest floor. It mirrors its aromatics on the palate, showcasing vibrant tartness, ripe black cherry, and the richness of plum. Its medium body and gentle tannins culminate in a long finish that leaves a lasting impression.
Pairing: Pinot Noir, with its fruit-forward and less tannic profile, offers a versatile range of pairing options that extend beyond traditional choices. For those seeking to complement its vibrant acidity and nuanced fruit flavors, lighter dishes featuring seafood such as salmon or halibut offer delightful pairings, accentuating the wine's elegance. Similarly, tender chicken dishes harmonize with the wine's bright acidity, while rich, creamy pasta dishes and risottos find balance with Pinot Noir's refreshing palate-cleansing qualities.
Moving beyond the usual fare, Pinot Noir also pairs excellently with heartier dishes. Consider serving it alongside stews infused with wild mushrooms and root vegetables, where the wine's delicate flavors complement the dish's earthiness. Beef Bourguignon is a timeless choice for a classic Burgundian pairing, showcasing the wine's affinity for robust flavors.
For those looking to venture into more adventurous pairings, explore the combination of Pinot Noir with char siu pork or crispy duck pancakes, where the wine's fruitiness complements the savory-sweet notes of the dish, creating a symphony of flavors on the palate. Additionally, consider pairing Pinot Noir with grilled lamb chops or roasted game birds for a memorable dining experience highlighting the wine's versatility and charm.
Beef Bourguignon By Melissa Clark
About: For over five centuries, the name Fornerot has resonated through the winding streets and lush vineyards of Saint-Aubin, nestled amidst the renowned appellations of Puligny-Montrachet and Chassagne-Montrachet.
The lineage of the Fornerot family in Saint-Aubin dates back centuries, with records tracing back to Jeahn Fornerot's marriage to Philiberte Genin in 1618. For over 500 years, our family has tended to the vines of this historic village.
Beyond viticulture, the Fornerots are renowned nurserymen who cultivate Pinot Noir and Chardonnay plants bearing the signature "made in Saint-Aubin." From 1951 to 1970, their nursery facilitated the establishment of vineyards for notable figures, including the former Chief of Protocol of Queen Elizabeth II, sourcing plants from the esteemed Hambledon Vineyard estate in southern England.
Carrying forth this rich heritage, Jérôme Fornerot honed his skills at the family estate in Saint-Aubin following his studies in viticulture and oenology at the prestigious Beaune wine school. In 2004, Jérôme embarked on his own winemaking journey, acquiring 4.5 hectares of vineyards in the esteemed Santenay and Maranges appellations. Over the years, he expanded his holdings, acquiring his first plot in Saint-Aubin in 2013. In 2018, tragedy struck with the passing of Jérôme's father, Jean-Charles. In his honor, the family estate underwent significant expansion, swelling to 16.5 hectares, primarily in Saint-Aubin.
This expansion began a new chapter for the estate, enabling increased sales in bottled wines while maintaining partnerships with local merchants. Our wines find homes across France, gracing the tables of individuals, esteemed wine merchants, and renowned restaurants. Additionally, we proudly export our wines abroad, sharing the essence of Saint-Aubin with enthusiasts worldwide.
At Domaine Jerome Fornerot, a commitment to naturalness and simplicity guides their vineyard management practices. With a focus on sustainable viticulture, they carefully control and minimize phytosanitary inputs while employing moderate plowing techniques to nurture the soil and manage grass growth.
