Taste: This wine has a deep, bright, and intense red color. On the nose, notes of ripe
fruit and cherry are evident. A bold structure, yet with a smooth and velvety mouth-feel.
This wine reminds me of Goldilocks and the Three Bears because the balance of fruit,
tannin, acid, and complexity is the true Baby Bear of the field...‘just right.’
Pairing: It goes perfectly with game, grilled or stewed meats, and very mature cheeses.
I’m craving a rabbit ragu over freshly made pappardelle, topped with some shaved Grana Padano and fresh black pepper. You could also opt for grilled salmon, or go vegetarian with grilled eggplant or mushrooms stuffed with herbed ricotta and topped with caramelized balsamic vinegar.
About this wine. The name Justo comes from a combination of the English word ‘Just’ and the Italian word ‘Giusto’, meaning ‘Right.’ This wine is an appassimento style wine – the grapes are dried for a short period of time, about 20 days – thereby creating a wine that is “just right.”
Fermentation with skin contact occurs for 15 days before being racked into
stainless steel tanks for complete malolactic fermentation. After resting in the
bottle, the wine is released and ready to enjoy. It represents a balanced wine from a stylistic point of view: essential and instantly comprehensible for the consumer. An elegant wine in which a fair balance of all elements has been achieved, identifying just the right amount of time drying the grapes and therefore just the right level of concentration.
About the winery. Cesari was founded in 1936 by Gerardo Cesari, who set out to produce an Amarone capable of competing with the great red wines of the world. Joined by his son Franco in the early 1960s, operations were expanded to conquer the export market. As one of the first Italian wines to be exported to five continents, the Cesari name quickly became synonymous with Amarone worldwide.
The winery continues to evolve while staying true to its regional roots. Franco’s children,
Gerardo and Deborah have joined their father in upholding the pillars of traditional
winemaking while introducing innovative technology at their two state-of-the-art
cellars.
