The palate is medium-bodied, vibrant, and fresh, with well-integrated acidity and polished tannins. Flavors of sour plum, red currant, and rosemary carry through to a dry, slightly savory finish, marked by a clean, mineral edge.
Pairing: Monica’s bright fruit and subtle herbal tones make it ideal for dishes with balanced richness and acidity. Traditional Sardinian options, such as malloreddus alla campidanese or stewed lamb with myrtle, pair naturally. About: PALA is based in Serdiana, a rural town located about 20 kilometers northeast of Cagliari in southern Sardinia. This commune, with a long agricultural history, is at the center of the winery’s operations and houses both its winemaking facility and key vineyard sites. Founded in 1950 by Salvatore Pala, the estate has remained a family-owned venture for over seventy years. In 2024, Lia Tolaini-Banville became the owner of PALA, marking the estate’s evolution while maintaining continuity with its Sardinian roots.
