The R. Dumont Brut Tradition champagne showcases the elegance and finesse of Pinot Noir (90% Pinot Noir & 10% Chardonnay) from the south of Champagne. Raspberry and pomegranate, spiced apple and brioche buns all coalesce together in a rich & round, yet zesty, bubbly. It's the complete package with its lush, tiny bubbles and the chalky minerality we all love from Champagne. Try this with fried Maitake mushrooms or vegetable tempura with ponzu sauce, butternut squash ravioli with brown butter sage, chicken teriyaki, Swedish meatballs, duck and cherry mains... you get the idea; the world of wine pairings is your oyster.
Next, Champagne Charles Le Bel “1818” Brut is the second label of the historic champagne house, Billecart-Salmon. Sparkling and crystalline with fine and plentiful bubbles. Aromatically, this wine opens with notes of poached pear, flinty citrus, and galangal0, then blossoms with air into harmonious notes of white stone fruits as well as Mirabelle plums and dried fruits over buttered brioche toast. The palate is wonderfully structured, elegant, and dry with flavors of fruits like Asian pear, green apple, kumquat, and red plums. Its refreshing finish ends with lifted notes of citrus fruits and savory flavors that include a dash of pepper and toasty baking spice.
Last but most certainly not least, the Lingot-Martin Bugey-Cerdon has been a Champion Wine Cellars favorite for years & it's the best time of year to enjoy this charming sparkling rosé from the French alps.
