We are traveling to the Mediterranean for our third package offering; namely, Corsica and the south of Italy. We're working with wines from indigenous grape varietals and cheese styles rooted in traditions that date back to pre-Roman times from small creameries.
Though each of the three wines and three types of cheese we've selected is excellent alone, together they shine! We've chosen the pairings to highlight and amplify characteristics already present within the wines and cheeses, to play with texture, acidity, fat content, and more. We're including enough wine and cheese to share with a small group or for 1-2 people to enjoy over a few sessions (1/4 lb. of each cheese). Think of this club as containing everything you need for a delicious and educational evening, whether it be: date night, an exclusive, invite-only wine tasting at home, or time to "treat-yo-self"!
Tomme Corse de Brebis is a raw ewe’s milk, natural-rinded tomme from Corsica, a French island that is situated closer to Italy than it is to its spiritual home. The landscape in Corsica is rugged and brambly, which is a perfect browsing situation for sheep and goats. Besides a silken, yet chewy paste, you will note hints of flowers, herbs, and an undeniable nuttiness that is associated with ewe’s milk. It is rare to find Corsican fromage in the U.S., so this is an utter treat.
Fleur du Maquis is a ewe's milk morsel from Corsica. This uncooked, unpressed, semi-soft fromage sports a natural, wild, moldy rind that is encrusted in savory herbs and juniper (as well as chili peppers sometimes). The texture of the paste is velveteen, with a tart, milky, and undeniably savoury flavor profile. Despite this cheese's lively exterior, don't you dare skip out on the rind in your bite!
Corsaro Nero is a pasteurized sheep and cow’s milk blend made in Calabria, Sicily, and Sardinia. It is used like a common aged pecorino; therefore, it can be deemed a table cheese, meant to be enjoyed casually, or it can go into recipes and grated on top of one’s pasta, salad, or both. A cheese this substantial with hefty, briny salinity deserves a wine with the same amount of oomph and complexity.
