Pet nat anyone? Melanie and Aymeric Hilaire fused their names together in 2008 to start this cult Loire Valley winery called Melaric. They are part of the natural wine movement for sure. Located in the southern portion of Saumur in the Loire Valley, they never have and never will use herbicides, pesticides or any other chemical in the vineyards or winery. This 100% cab franc comes from clay and limestone soils that give us those classic dusty cab franc aromas. Fermentation takes place in tank, but finishes in the bottle, giving us a sparkling, fruity, patio pounder! The fruitiness and acidity love salty snacks and charcuterie.

Cuvée: VDF ‘Globules’ Rose Pet-Nat
Grape Varieties: Cabernet Franc, purchased from a vineyard next to their property
Natural yeast fermentation, direct pressing and initial fermentation in tank. Bottling is done when there is 20-25g/l of residual sugar. Fermentation usually ends after about a fortnight. Depending on the vintage, there may be some residual sugar. In January, the wine is disgorged and topped-up with the same wine (no dosage liquor). Aged 4-6 months in bottle
