Tasting Notes: ‘Indigène’ is a Chardonnay dominant Extra Brut, showing clean and pure flavors of crisp apple, citrus peel, and slight brioche undertones, thanks to partial vinification in the barrel.
The grapes are hand-harvested and pressed directly. The juice ferments naturally with limited sulfur added in 40% stainless steel and 60% barrels. The wine then ages on its lees for four months, during which time malolactic fermentation occurs naturally. Rather than using the sugar or lab-cultured yeast usually used to jump-start the second fermentation, Domaine Tissot creates its 'prise de mousse' using oxidized vin de paille together with frozen grape juice. This then referments the wine in the bottle for six to seven months. The Tissot's believe that the natural yeasts present in the vin de paille bring additional complexity and richness. The final wine ages for 18 months before disgorgement with zero dosage.
