Some of the Chardonnay for this wine was grown in Pierry, and around 90% came from grand cru vineyards in Chouilly, Oiry and Cramant. The wine is a blend of two vintages and spends six years on its lees. Seven grams dosage.
Tasting Notes: Bright and seductive citrus notes, followed by hints of apple blossom with a palate that fills out with flavors of luscious and fresh sweet cream.

Pairing: Dutch Baby with Bacon and Runny Camembert by Melissa Clark for the NYT. And, I mean, you can eat it in the morning, but it would be just as good for dinner (just like this Champagne)!
