From: Côte des Blancs, Champagne, France
Varietal: Chardonnay
Tasting Notes: Stunning grower champagne sourced from 40-year-old Grand Cru vines on pure chalk. About 70% of the base wine is from 2016, with the remaining being reserve 2013 wine. Highly aromatic, with green apple skin, quince, brioche, seashells, and lemon oil leading the way. Compact bubbles glide over a buttery-silky texture before an elegant mousse takes over. Finishes crisp and chalky with a refreshing mouth-watering acidity to cleanse the palate.
Pairing: This gorgeous champagne could be drunk happily as an aperitif; with fresh cheeses or caviar; or alongside fresh fish dishes, such as sushi or scallop crudo. We love the opulence and freshness this champagne gives, and to do it justice, we’re sharing a greedy recipe; Le Bernardin's Salmon-Caviar Croque-Monsieur by Amanda Hesser.
