Varietal: Vermentino
Taste: Breezy, beachy, and bright. This lovely white wine from Corsica has notes of fragrant white peach, cosmic apple, white flower, grapefruit, crunchy pear, fennel, and green almond. Light to medium in body, the natural acidity from the varietal keeps this wine in the “rich yet crisp” lane of taste. The aromas from the nose follow to the palate, where these flavors lead to a lingering, mineral, and distinctly saline finish.
Pairing: This white wine is incredibly versatile and a fantastic pairing for anything from the sea or with herbs and (or) citrus. Raw or marinated shellfish, like ceviche or fish tacos, would be excellent. Other superb pairing suggestions include serving this wine with spaghetti alle vongole (linguine with crab- we’re sharing a clam linguine recipe below that’ll be an excellent alternative), pasta or gnocchi with pesto, grilled/baked/poached white fish like seabass or cod with fresh olive oil and salsa verde (or any sauce that includes herb and citrus), dishes that include early summer vegetables like peas, broad (fava) beans, fennel, and leeks, and fritto misto.
