Taste: The OT Rosé offers a pale-hued color and a bouquet of citrus, grapefruit, tangerine, red fruits, cocoa butter, and nutmeg. It is bright, crisp, and mineral from first sip to finish, with flavors of just-ripened strawberry, sea spray, clementine and lemon-lime. This wine is a perfect balance of fruit and acidity, its finish bright and dry.
Pairing: On the palate, this wine is fresh, lively, and well-balanced, with a crisp acidity that enhances the fruitiness and adds a touch of minerality to the finish. The flavors of red fruit are complemented by a hint of spices, such as white pepper and nutmeg, making it an ideal wine for a wide range of occasions and food pairings.
For a general pairing, this Rosé is perfect as an aperitif, or to enjoy with light summer dishes, such as salads, seafood, and grilled vegetables. Its refreshing acidity also makes it an excellent match for foods such as Indian or Thai cuisine. As a regional pairing, this wine pairs particularly well with Catalan cuisine, as it is produced in the Penedes DO region of Spain. About. Vins El Cep, one of Spain's top Cava producers, has recently released its 2021 OT Rosé, a 100% Pinot Noir Rosé from the Can Prats vineyard estate located in Sant Llorenç d'Hortons in the Penedes DO region of Spain. This wine is a true representation of the unique terroir-driven and sustainable wines that Vins El Cep is known for.
The Can Prats vineyard estate, which is owned by the Carreras family, is a 60Ha. estate where Macabeo, Xarel·lo, Parellada, Pinot Noir, and Tempranillo are grown. The estate was first developed by Berenguer Raspall in 1393, and viticulture was consolidated on the farm by Jaume Prats in 1568. The estate's masia, or farmhouse, is still standing and is a testament to the history and tradition of wine-making in the region.
Vins El Cep is a collective of families that produce sustainable cavas and wines. The Can Castany vineyard estate, which is owned by the Masana family, is a 50Ha. completely organically cultivated estate where Vins El Cep's oldest vines are found, dating back to 1928. The Parera family owns the Can Miquel de les Planes vineyard estate, where completely organic and biodynamically farmed Macabeo, Parrellada, Chardonnay, and Cabernet Sauvignon are grown. Finally, the Esteve family owns the vineyard estate Can Simon, which consists of 50Ha. of Macabeo, Xarel·lo, Chardonnay, Pinot Noir, and Merlot.
Vins El Cep is the pioneer in D.O. Cava for the production of sustainably grown cava and was the first in Spain to produce a biodynamically farmed cava. This commitment to sustainability and terroir-driven wines is evident in the 2021 OT Rosé.
