Varietal: 100% Pinot Noir
Made with organically-grown Pinot noir grapes, this rosé was then aged on the lees for 5 months in neutral French oak. Often, rosé is aged in stainless steel so it’s much rarer to find one aged in oak. Winemakers use neutral oak to add more texture to wine. By then aging on the lees (grape skins), this rosé had a whole range of interesting aromas and flavors!
Tasting Notes: Tart pink grapefruit and lemons paired up with ripe strawberries and cherries. Then add a couple sprigs of spearmint and a honeystick and you’ll have perfectly captured the aromas in this rosé. On the palate, fruity flavors of pink grapefruit, lemons, raspberries, and strawberries first washed over my tongue, followed by tart rhubarb and watermelon candy. While this rosé is dry and tart, I detected a hint of maple syrup and honeystick before it evolved into a spicy ginger finish.
Pairing: Turkey burgers // fish tacos with cabbage and guacamole // grilled whole eggplant with harissa vinaigrette
