Region: IGP Perigord, France
Varietal: 100% Merlot
Tasting Notes: Rich dark fruit, some warm spices, and smoke on the nose. Full figured merlot, flaunting chocolate covered dark cherries, vanilla, leather, and blackberry on the palate. Beautiful balance and longevity.
Pairing: Lamb, pork, and duck dishes are my advice. The meat can take a good salting, and is a bit leaner while remaining succulent and flavorful. This Crispy Duck Salad With Green Beans and Honeyed Almonds by Melissa Clark is a perfect example.
About: Château Puy-Servain-Calabre is owned by Daniel Hecquet, one of the region’s best and most innovative
winemakers. Hecquet is known throughout greater Bordeaux for producing among the highest quality
and quality driven wines in the appellation.
Daniel interned as a winemaker for the celebrated Chateau D’Yquem before returning to his family
estate in Ponchapt where he has been focused on producing the optimum possible quality from his
vineyards. This domaine is a leader in the Bergerac and Montravel appellations
The estate takes its name from the locality, which means Summit (Puy), windy or served by the wind
(Servain). Both the elevation and windy vineyard location contribute to the concentrated quality of the
grapes
