From: Impruneta, Tuscany, Italy
Varietal: Sangiovese, Merlot, Malvasia Nera
Taste: This wine greets you with a bright ruby color adorned with garnet reflections. The bouquet reveals enticing notes of red fruit and cherry, complemented by aromas of red and dark berries, cherry chocolate, baking spices, hazelnuts, and subtle hints of bark. The palate is largely the same notes of black cherry compote, interwoven with hints of small red berries and baking spice.
It is a medium- to full-bodied experience on the palate, showcasing smooth and mellow textures with fine, ripe tannins that add complexity and depth. The wine is savory and succulent, marrying the elegance and pleasantness of Sangiovese with the roundness and complexity brought by small portions of Merlot and Malvasia Nera. This results in a long and textural finish.
Pairing: Chianti Classico is an excellent match for rich, savory foods, particularly those with a good fat content. Classic pairings include Italian pasta with tomato-based sauces, grilled meats, and aged cheeses. The wine's acidity cuts through the richness of these foods, enhancing the flavors and creating a balanced dining experience. Its complex flavor profile, often featuring notes of red fruits, herbs, and spices, also allows it to pair well with various Mediterranean and rustic dishes. Avoid delicate foods, light salads, very spicy foods, or cream-based sauces. Sticking to savory, robust dishes matching the wine's structure will ensure an enjoyable pairing.

Vegetarian Lasagna Bolognese

About: Atop a hill a few miles south of Florence, on the ancient road to Volterra, lies Tenuta Collazzi. This architectural marvel, initially designed by Michelangelo in 1560 for his friend Agostino Dini, boasts commanding views of the surrounding Tuscan countryside. Characterized by two rows of loggias above a large courtyard, the villa remained incomplete for centuries until it was purchased by the Marchi family in 1933.
Under the stewardship of the Marchi family, Tenuta Collazzi has undergone significant transformation over the past decade. Siblings Carlo Marchi, Grazia Marchi Gazzoni Frascara, and Bona Marchi Frescobaldi have invested heavily in the estate's development, renewing the vineyards and restructuring the cellar with a clear vision: producing unparalleled wine excellence.
