Tasting Notes: Golden straw color with streaks of green. The nose displays light florals, fresh green apple, ripe pear, lemon peel, and wet stone. These scents balance perfectly against the lively acid, sharp minerality, and chalky hints found within its lemony and white peach core. Classic, lean & flinty Chablis.
Pairing: Chablis is an easy shoo-in for scallop, oyster, seafood, fresh greens and escargot, but it's also perfect for comfort-food pairings where you're looking for contrast; ie where you want to eat something greedy but don't want to be weighed down after. About: Domaine Louis Moreau is a 50-hectare estate based in the commune of Beines in the heart of the Chablis appellation. Louis and his wife Anne founded the domaine in 1994 with half the family vineyards once leased to the négocaint firm J. Moreau & Fils. Louis Moreau owns parcels in four of Chablis’ seven grand cru climats including the grand cru Clos des Hospices dans Les Clos, three premier crus, and several plots in the Chablis and Petit Chablis appellations.
Over their centuries in Chablis, the Moreau family has accumulated 124 acres of vines, and the 2020 Chablis is a domaine bottling. That means the grapes are harvested and the wine is bottled properly on the estate, and the 2020 showcases the energy of very healthy grapes that are farmed under the philosophy known as la lutte raisonée (“the reasoned struggle”), sharply limiting the use of chemicals. Louis Moreau ferments their Chablis entirely in stainless steel with native yeasts—as classic as it comes.
