From: Santenay, Côte d’Or, France
Tasting Notes: This wine has the flinty, reductive nature people love about white Burgundy. On the nose, the musk of the reduction mingles with notes of white flower and tempers the richness of fruit (golden apple, pear, and lemon) in a perfectly balanced way, adding a lengthy lift to the finish.
Pairing: Pair food with White Burgundy from Santenay, renowned for its elegant and complex Chardonnay. These wines balance ripe fruit and crisp acidity, making them versatile food wines. Seafood, such as grilled or poached salmon, is a classic choice, enhancing the wine's natural richness. Poultry dishes, especially those with creamy sauces like a classic chicken fricassee, complement the wine's texture and depth. For vegetarians, risotto with wild mushrooms or a cauliflower gratin can be excellent choices, as the earthy flavors pair beautifully with the wine's subtle oak and mineral notes. A selection of soft and nutty cheeses, like Camembert or Gruyère, can be a simple yet sophisticated pairing, bringing out the wine's complexity and refined finish. We reccommend trying it with Bryan Miller and Pierre Franey's recipe for Fricassee Of Cod With Red-Pepper Compote.
About Domaine Françoise & Denis Clair. A story of tradition and passion for winemaking, the domaine was established in 1986 by Denis Clair, a bon vivant known for his infectious laughter. The Clair family, rooted in the region for generations, traditionally sold their grapes to négociants. Denis’s pioneering spirit led to the decision to bottle their wines, marking a new chapter in their winemaking.
Françoise, Denis's wife, hails from Saint-Aubin, a nearby AOP village known for its distinct terroir. The couple’s winery is located here, only 2 1/2 miles northwest of Santenay. Their son, Jean-Baptiste, joined the family business in 2000, bringing a fresh perspective, particularly to the white wines. Today, the family owns 15 hectares of vineyards, beautifully distributed between Santenay and Saint-Aubin.
One of the domaine's standout creations is the 2020 François et Denis Clair Santenay Blanc from Clair's expertise and the richness of Santenay's terroir. The grapes, harvested from 35- year-old vines, are manually picked and undergo fermentation and malolactic in barrels, with a portion of new oak to add complexity. The wine is characterized by its rich, fruity profile and open aromas. It is a wine that speaks of its origin, with layers of complexity derived from the varied clay and limestone soils of the Santenay vineyards.
