Tasting Notes: Frappato from the Vittoria area of the island that was aged in concrete vats after a spontaneous fermentation. The fruit is dark yet accessible and makes for a great red wine to drink with a slight chill.
Pairing: Pair with grilled asparagus, octopus, or vegetable lasagna.
About. The three friends who founded COS were regarded as the youngest winemakers of their generation in 1980. The winery follows biodynamic farming principles in order for the vines to maintain a balance with nature and express their true character and terroir. Eventually, they also got rid of the most of their oak barrels and start using amphoras. Clay vessels have been used to ferment and age wine since ancient times. The COS name is now immediately associated with amphora wine from Sicily.
