From: Burgundy, France
Blend: Aligoté
The Aligoté grape, while overshadowed by its famous sibling Chardonnay, carves out a niche for itself in the annals of Burgundy winemaking. This grape is the pulse behind the Kir cocktail and carries its tale of light, citrusy notes.
Taste: It first reveals delicate aromas reminiscent of fresh hay and chalk. As the wine dances on the palate, it unfolds with nuances of honeydew, citrus, and the hint of oyster shell. It's a wine that resonates with brightness and minerality, anchored with gentle acidity and an energetic finish.
Pairing: Pairing this Aligoté is a journey unto itself. Its innate minerality and refreshing acidity complement a plethora of dishes. Seafood, particularly shellfish and sea bass, becomes an ambrosial experience. Its affinity for soft cow milk cheeses like Brie, Camembert, and Chaource creates a symphony of flavors. And for those seeking an authentic French touch, snails or prawns with garlic elevate the experience.
About: Brothers Romain and Jean-Guillaume Chapuis hail from Aloxe-Corton, with a familial lineage steeped in winemaking in the rich Burgundian soil. With a shared vision and passion for gastronomy, wine, and the profound flavors of the terroir, the two founded the Chapuis Frères house in 2009, nestled in the picturesque village of Pommard.
The domaine is divided distinctly between two labels: Chapuis Frères with its classic cuvees and Chapuis et Chapuis, which emphasizes a no-added-sulfite approach, reflecting a commitment to natural wine practices.
Romain's journey is particularly intriguing. His tenure as a flying winemaker took him across various landscapes, only to finally draw him back to the heart of Burgundy. Working alongside Philippe Pacalet for three transformative years, Romain's inspiration took shape. Hence, 'Chapuis & Chapuis' was born.
Their sourcing approach underscores their commitment to quality and authenticity. The grapes from family vineyards or allied organic growers show their enduring relationships and trust. Notably, in recent times, their adaptability has been proven as they sourced organic grapes from regions like Alsace due to unpredictable weather conditions.
The 2021 Chapuis et Chapuis Bourgogne Aligoté is a delightful representation of this grape. It draws from multiple plots, including Savigny-lès-Beaune, Hautes-Côtes de Beaune, Pommard, and Couchois. Aged gracefully in old barrels and bottled after half a year, it remains unrefined and unfiltered, preserving its raw, authentic essence.
