Tasting Notes: Bright ruby in hue with ripe red cherry aromas. The wine absolutely bursts on the palate. Supple, silky tannins combined with an abundance of juicy fresh, ripe, and tart fruit. The wine benefits from its slightly cooler mesoclimate, because it manages to be ripe without being a fruit bomb and beautifully medium bodied with pleasant acidity. Utterly quaffable.
Pairing: Since the Cévennes foothills are known for their wild mushrooms, I can't think of anything better than pairing this with a mushroom risotto.
