Varietal: Viognier
This small-production orange wine is made of Viognier sourced from old plantings in the famed Deux Vert vineyard, which is located in the Yamhill-Carlton AVA in Oregon's northern Willamette Valley. This vineyard is LIVE certified for its sustainable practices and Salmon-Safe. 2019 was a much cooler vintage and the fermentation was slow. Finally, after 24 days of skin-contact fermentation, the wine was pressed off into twice-used Acacia puncheons and Bordeaux barrels for 10 months of maturation. The wine is vegan, as it is unfined and unfiltered.
Tasting Notes: Fresh, light, fruit-driven flavors of peach pit, chalk, peach-blossom, and candied citrus (lemon and orange). This wine has the incredible structure of a great orange wine combined with aromatics more typical of white wine.
Pairing: Drink this wine with fried chicken, smoked or grilled salmon, or hard cheeses such as Pecorino or Gruyère
