Taste: A beautifully transparent nose with aromas of ripe strawberries, black cherries, and hints of white pepper, even a little touch of mint. These elegant fruit notes add a seductive edge to the wine. On the palate, it’s beautifully juicy and slender and already so accessible. Tiny tart cherries tingle on the tongue, and a beautiful salinity lingers on the finish.
Pairing: Pommard wines can be extremely intense and dense and take forever to “open.” This particular Pommard is quite the opposite (its vineyards probably sit close to Volnay). We recommend serving this slightly chilled, and pairing options are many! Some great ideas include serving this alongside roasted chicken and shallots, anything with mushrooms, grilled salmon or tuna, and risotto or pasta with butternut squash/mushroom/brown butter and parmesan (check out the orzo with butternut squash recipe below).

About. Domaine Bonnardot is a family estate in Bonnecontre, near the Citeaux Abbey. The family has a long history of winemaking in the area, dating back to 1470. Still, in more recent memory, Elizabeth (Ludovic’s mother) graduated from studying enology in Beaune, studied with Jules Chauvet, and began to practice more natural approaches to her winemaking. Today, her son Ludovic, who began experimenting with natural winemaking with grapes from an old parcel of his grandfather’s as a teenager, now guides the winemaking at the estate. He prefers not to add sulfur to his wines. After completing his education in winemaking, he returned to his family lands in 2005 and began to convert the 15 hectares situated between Pommard and Santenay to purely organic farming.
Pommard is a village located next to the town of Beaune. It’s one of the most renowned in France, made up exclusively of red Pinot Noir grape wines. The plot of the Estate is located at an altitude of 310 meters in the middle of the hillside, demarcated above and below by dry stone walls.
