Tasting Notes: Ruby red with garnet hues. Aromas of red berries, rosemary, and musky floral notes. Crisp and lean, this wine is nicely balanced with a measured tannin that blends perfectly with a volcanic minerality and juicy acidity.
NOTE: Oxygen will do this wine good!!! Swirl in glass upon opening, or do a short decant! This wine needs some air for maximum potential.
Pairing: This wine will pair beautifully with sausages, beans, and a range of pasta dishes from caccio e pepe to meat or mushroom lasagna. Polenta or Grits with Beans and Chard by Martha Rose Shulman will defintely pair well with the wine, and if you’re feeling like you need to add some meat to the meal, feel free to serve up some sweet or hot Italian sausage with it.
About. This wine comes from the deep red, volcanic soils of the Cesanese di Olevano Romano DOC. "Silene" was named after a wildflower commonly seen in Damiano Ciolli vineyards called Silene vulgaris. The flower can be seen on the bottle’s label. This wine is made from Cesanese d’Affile grapes blended from different vineyard blocks, which are on average 30 years old. Olevano Romano is located just 35 miles south of Rome, with vineyards planted in volcanic soils 450 meters above sea level. This Silene bottling is aged in concrete for a year and conveys more delicate qualities of the Cesanese red grape.
