Tasting Notes: There are pretty and fragrant aromas of dark cherry, truffle, dried herbs, and old oak with an almost floral lift to it. It’s then followed by a bright, juicy and even silky mid-weight palate. It’s a classic bistro red but also has some quite serious complexity with dark cherry and roasted meat flavors supported by slinky tannins that lead to a tarry, lingering finish.
Pairing: Go for something full and flavorful with this Barbera. Piedmont’s famous tajarin (Piedmontese for tagliatelle or its narrower version, tagliolini), which is an egg noodle pasta is the perfect start. Classic toppings for tajarin include: butter and sage sauce, pork and veal sugo, or porcini mushroom sauce, so you can have a vegetarian or meat-based meal, depending on your preference.
