Nestled in the heart of the Valencia mountains, the village of Baldovar is home to Baldovar 923, a winery that has quickly gained international recognition for its exceptional, terroir-driven wines. One of their most outstanding creations is the 2019 Baldovar 923 Cañada París, a white wine that perfectly encapsulates the essence of the winery's unique high-altitude terroir and ancient vines.
A Dream Realized: The story of Baldovar 923 began in 2016 when four founders with a shared dream of producing high-quality wines recognized the untapped potential of the Valencia mountains. They saw the region's pure soils, high altitude, old vine indigenous varieties, and unique climatic conditions as the perfect ingredients for creating truly exceptional wines.
In order to bring their dream to life, the founders restored the village's wine cellars, which had once been a winemaking cooperative built in 1958, but had been closed for over a decade. Today, the winery's certified organic vineyards span 14 hectares, and the vines are aged between 20 and 80 years old, thriving at an altitude of 900 to 1,200 meters.
The 2019 Baldovar 923 Cañada París: The 2019 Baldovar 923 Cañada París is crafted from 100% Merseguera grapes sourced from 20 to 60-year-old vines grown at an altitude of 900 to 1,200 meters. The vines are planted in chalky limestone and sand schists, dating back to the Cretaceous and Jurassic periods. The winemaking process involves spontaneous fermentation and resting on fine lees for nine months while aging in stainless steel (90%) and 500L French oak barrels (10%). The wine is then bottled unfined and unfiltered, ensuring the purest expression of its terroir.
