Notes: Anarkia is fermented with native yeasts in stainless steel. Unfiltered, unfined, and no sulfur added. A 'zero zero' wine if you will. The resulting wine is a lighter Tannat with fruity aromas that lead to notes of plum, cassis, and blackberry on the palate. Textured and mineral-y with a finish filled with soft rose petal and cherry.
Pairing: For this expression of Tannat, I’d go with something with a lot of flavor, but no need to go meaty, so Bryant Terry’s Millet Cakes with Smoky-Spicy Green Sauce (NYT Cooking) would be perfect. It makes four servings and will take about an hour and a half of active time, plus 2-48 hours of chilling.
