The Domaine des Forges has always made it a point of honor to respect the vine and its environment, by promoting biodiversity. Balanced and gourmet wines are produced there, highlighting the terroir. The history of the Domaine des Forges begins in 1890 with the purchase by Pierre Robineau, of 2 hectares of vines, a plot called "Le Clos des Forges". Today the vineyards of the family Branchereau (5 th generation) has 47 hectares and is situated between the Loire and the Layon. It is ideally positioned for the development of noble rot, essential for the development of great sweet wines. Stéphane and Séverine present wines from the Savennières, Anjou, Cabernet d'Anjou, Coteaux du Layon and Quarts de Chaume appellation. The harvest is manual, the work is precise and the vinification according to the rules of the regional tradition.
Savennières is a small village located about 20 km south-west of Angers and north of the Loire. The appellation surrounds the town and covers a little over 150 hectares. Its terroir is unique and is able to sublimate the Chenin Blanc and produce great wines that reveal themselves over time.
Tasting Notes: The Savennières “Le Clos du Papillon” is very aromatic and very round. Its very expressive nose develops flavors of fresh citrus fruits. In the mouth, it is full-bodied and round, marked by a beautiful minerality.
Pairing: It is a wine to be served chilled but not too much. The ideal temperature would be 12 ° C. Do not hesitate to decant it for 1 hour or to open it a good two hours before tasting. This will allow it to develop its full potential. It will be excellent on a complete meal. As a starter, you can opt for gingerbread toast with foie gras and mango. To follow, a free-range chicken, forest sauce and its gratin dauphinois will be perfect! Don't skimp on the cheese because almost anything will fit it! Finally, for dessert, a citrus tartlet will finish the meal with a sweet touch.
