Blend: Pinot Noir
From: Buxy, Cote Chalonnaise, Burgundy
Taste: This is an old school red burgundy, crunchy and earthy, with much more minerality on the palate than you’d expect from the nose. It reminds me of vintages past, and is rather austere compared to the amount of fruit you’ll get from Pinot Noir these days (Burgundy or otherwise). Austerity aside, I love this wine and hope you do too! Embrace those floral, redcurrant, cranberry, and earthy, woodsy smells and dive into something classic.
Pairing: And, on that note, please check a little recipe for David Tanis’ Rustic French Pork and Chicken Pâté. Too much? Not to worry, we’re recommending two recipes today. The latter is less intensive and equally delicious; a White Bean Pâté by Martha Shulman.
