Blend: Cabernet Franc (25%), Cabernet Sauvignon (25%) and Merlot (50%)
From: Bolgheri, Tuscany, Italy
Taste: Intense notes of dark fruit, violet, toasting and menthol follow each other on a subtle and refined texture, in which freshness and tannin give off the sip. Fresh, elegant, savory and with sweet tannins.
Pairing: Ideal with red meat or poultry, it would be a perfect addition to truffled guinea fowl. Perhaps also consider a nice hearty chili with pork sausage… on that note, we’re going to share a chili recipe with you today by Sarah Digregorio, Slow Cooker Chili!
Even though Motta winery is young, it lacks nothing in passion, drive and experience. Motta is the realization of one man’s dream, Fabio Motta, who founded the winery in 2009 with the acquisition of 4 hectares of vines that were planted in 1997 within the Bolgheri DOC. The position was excellent: overlooking the sea, at the feet of the characteristic rolling hills of Bolgheri, with a south-western exposure.
This Bolgheri Rosso is a classic, but unconventional blend of Merlot, Cabernet Sauvignon and Sangiovese, featuring all the qualities of a full bodied Bolgheri wine: it is elegant, fruity and extremely drinkable. Each variety is harvested by hand at full ripening in small baskets. Pievi is fermented in wooden barrels of 33 hl size with natural yeasts only. The cap is pushed down by hand twice a day and in the first days of fermentation. Frequent delastages are performed to let the must breathe. Normally the fermentation takes 2 weeks for each variety, after which the wine is blended and transferred into 2 and 3 year old barriques for the malolactic fermentation. This wine ages in oak for 12 months. Pievi is not filtered.
