The 2017 Savigny-lès-Beaune 1er Cru Aux Gravains is also showing well, exhibiting aromas of raspberries, currant leaf, spices and incense. Medium to full-bodied, fleshy and nicely concentrated, this lively Savigny has rounded out well with further élevage and a little time in bottle, and it surpasses the assessment I formed of its merits a year ago.
Pairing: Think rack of lamb with a herb crust, or seared duck breast particularly accented with red fruits like cherries or blackberries, mushroom stroganoff, and light umami-rich broths such as you find in sukiyaki. This Mushroom Stroganoff by Hetty McKinnon enjoyed with a glass of this Pinot Noir forms a heavenly comfort on a cold winter day. It takes less than 30 minutes to prepare, and will keep you satiated all night!
About: Aux Gravains is a Premier Cru climate of the Savigny-les-Beaune appellation in the Cote de Beaune sub-region of Burgundy. Its position on the south-facing slopes of the Bois Noel hill gives it an excellent terroir that is well suited to the Pinot Noir that is grown here. Aux Gravains Premier Cru wine typically have fine tannins, a medium body and wild fruit characters. (Edited from Wine-Searcher)
