Resalte Vendimia Seleccionada is a red wine from the D.O. Ribera del Duero produced by Bodegas Resalte de Peñafiel. The winery is located in Peñafiel (Valladolid), near well-known winemaking areas such as Vega Sicília and Pago de Carraovejas.
Resalte Vendimia Seleccionada is a monovarietal Tempranillo. The grapes come from young vines that are between 15 and 20 years old, planted at an altitude of almost 1,000 metres, in the páramo, the highest area of Ribera del Duero. The soil of the area is limestone and the climate is characterised by temperature contrasts between the daytime, when it is very hot, and the nighttime, very cold. The yield of the vineyards is very low, and the productions never exceed 4,500kg per hectare.
To produce Resalte Vendimia Seleccionada the grape is destemmed and gently pressed. It is then vatted and an alcoholic fermentation begins at a low and controlled temperature, followed by a maceration that lasts from 18 to 20 days. Once vinification is complete, the wine spends from 10 to 12 months aging in 500 litre French oak barrels.

The wines of Ribera del Duero present a perfect balance between the vividness of the fruit and the refinement of the wood, which has led to them obtaining a well-deserved international acclaim.
Taste: Resalte Vendimia Seleccionada 2016 is a red wine with clean and intense aromas, and with a predominance of floral notes and those of black and red fruit. On the palate it is balanced and rounded, with an aftertaste of black licorice and silky tannins.
Pairing: Decant for 30 minutes before serving. Cold meat (charcuterie, cold cuts), Beef, Pasta with meat sauce, Grilled red meats.
