The Díaz Bayo family has produced wine in the village of Fuentelcésped in Ribera del Duero, Spain for more than ten generations, contributing to a history of viticulture in the area that dates all the way back to 1177, coinciding with the Christian reconquest of the region. The vineyards used for this wine are farmed sustainably and without irrigation, which saves water and stresses the vines to encourage a higher concentration of flavor.
