Ile de Vergelesses 1er Cru is made from 100% Pinot Noir from clay-limestone soils. All fruit is destemmed and fermented in stainless steel, then aged for 12-15 months in a mix of new oak barrels (no more than 25%) old oak barrels and stainless steel.
Pairing: Crispy Mushroom Focaccia by Erin Jeanne McDowell is a perfect accompaniment to the wine. You’ll enjoy the play on texture and the interplay between umami in the focaccia and the fruit in the wine. Yields one focaccia of about 12 pieces and takes about an hour and ten minutes, plus rising and resting time.
