Varietal: A blend of 70% Chardonnay & 30% Savagnin.
Tasting Notes: The Savagnin was kept under surface yeast called 'voile'. Very relaxed wine with great nuttiness and tingle. Delightfully refreshing, and purposefully oxidative, (as is the style for this type of wine) with ripe stone fruit notes underneath the nutty exterior rounded out by notes of lemon zest and a saline minerality on the finish. Charming, and a perfect match for so many dishes.
Pairing: Roasted chicken with mushrooms and fingerling potatoes, roasted winter vegetables, really anything sauteed in butter, and even dishes like carnitas tacos make a wonderful pairing experience.
