About. Introducing the 2021 Eric Texier VdF Chat Fou Rouge, a delightful and refreshing Rhône wine that embodies the innovative spirit and expertise of winemaker Eric Texier. This unique blend of 50% Grenache, 30% Cinsault, and 20% Clairette hails from the warm St-Julien en St-Alban zone on the northern bank of the Ouvèze River. Certified organic and hand-harvested, some of the fruit is sourced but all is certified-organic, like the estate vines.
The wine's production process pays homage to Texier's commitment to clean, natural winemaking. The bunches are partly de-stemmed and co-fermented with native yeasts in open-top concrete tanks with a short maceration (around 5 days)and no sulfur. No extraction techniques are applied to the wine, as is true for all Texier reds. Chat Fou is aged in concrete tank on its fine lees for around 12 months and bottled without fining or filtration and with a small amount of sulfur (for stability in transit).
The 2021 vintage marks a change for Chat Fou, as it is now bottled as a Vin de France rather than a Côtes-du-Rhône due to its reduced Grenache content. Despite this classification shift, the wine remains a shining example of Texier's masterful approach, offering a bright and fruit-forward flavor profile.
