Varietal: Grenache, tempranillo and syrah
Tasting Notes: Dark cherry red, with garnet tones. Viscous legs. Intense, pleasant nose with hints of the aging process predominating (smoky notes and licorice) as well as notes of red fruit (candied cherries) and black fruit preserve. Aeration reveals hints of spice and balsamic notes, alongside aromas of dried flowers. Very attractive mouthfeel, good volume, noticeable but very well-integrated tannins. Long, fresh finish with lactic notes.
Pairing: vegetables, small game, pates, grilled red meats, and grilled red meats.
The Cérvoles Celler winery, which boasts cutting-edge technology, was designed to take into account the size of the various plots so that each fermenter holds the grapes of a single grape variety and plot. Notice should be taken of the particular loading system employed: the tanks are filled from the bottom, a method that is much more gentle on the berries and avoids early lacerations of the skins.
