This 2017 Haute Côtes de Beaune comes from an appellation that covers an area spanning 29 small villages. It is produced by Domaine Roblet-Monnot, one of the foremost domaines in the region (with holdings based in Volnay) and an early adopter of biodynamic viticultural practices. The winemaker, Pascal Roblet, takes painstaking measures to ensure the health of his grapes. For example, he plows his vineyard rows using horses rather than tractors as a way to keep the soil healthier and less compacted, and he takes care to sort out only the best quality grapes for use in his blends.
This wine comes from calcium-rich limestone soils and was fermented in stainless steel tanks without using sulfites. It was then aged for 28 months in neutral 1-3-year-old barrels before being bottled unfixed and unfiltered.
