Taste: This wine presents an expressive array of aromas and flavors. The bouquet is a vibrant mix of citrus notes, including grapefruit, lemon, and lime, complemented by the subtlety of pear, apple, and melon. The palate follows with a similar zest, harmoniously blending these fruits with undertones of gooseberry, grass, and a hint of passionfruit. Floral notes of honeysuckle and elderflower add a delicate complexity while the essence of linden lingers. The unique clay and limestone soil composition imparts a distinct minerality to the wine, creating a balance between the citrus and fruit tones and the earthy touch of freshly wet stone. The result is a well-rounded wine that captures the essence of its terroir, offering a refreshing and nuanced taste experience.
Pairing: Rooted deeply in the terroir of Bordeaux, a region profoundly influenced by its proximity to water and fertile gravelly soils, this white Bordeaux exemplifies the principle "What grows together goes together." Its ability to express the nuances of its origin makes it a top choice among wine professionals for pairing with seafood, including mussels, oysters, and white fish. The wine's expression of place, encapsulated in its flavor profile, makes it an advocate for the region's diverse culinary landscape.
Some other successful pairings include serving this wine alongside soft goat’s milk cheese and lemon chicken, pasta or risotto with lemon accents (with or without seafood), and white fish dishes incorporating ginger, yuzu, and citrus/herbal accents. The wine also pairs splendidly with Arugula Salad with Lemon and Parmesan, Asparagus Risotto, and English Pea Ravioli with Crab or Lobster, where its crispness complements the freshness of the greens and the sweetness of the seafood. Angel Hair Pasta with Basil Pesto (check out the recipe below for another pesto pairing) finds a harmonious partner in this wine, as its zesty character balances the pesto's richness.
Fazzoletti With Chunky Pesto
By Mark Bittman
About. Founded in the 13th century, this chateau sits in the heart of Entre-Deux-Mers. The winery owns 121 acres of land, of which 49 are dedicated to vines. The remaining land is managed to create biodiversity. Beginning a few years ago, the winery also began converting to organics. This wine is a classic expression of stainless steel fermented white Bordeaux. Stone and citrus fruits abound in the glass, and the little time on the lees gives the wine extra texture and mouthfeel.
