Taste: I’m sorry about the label! But, the wine inside is what counts; and it is a delicious southern French rosé packed full of flavor, and organic to boot! Beautiful intense color with an explosion of fruit in the nose and on the palate. This wine tastes as though a Tavel and a Côte de Provence rosé were combined in joyous union. An effusively aromatic nose with ripe raspberry and cranberry flavors on the palate and nicely balanced with just enough bright acidity to counter the tasty, southern fruit. Great with or without food.
Pairing: This wine is another one of those versatile gems & can be enjoyed alone, or alongside Bouillabaisse, all the way to being served in concert with something like lamb chops with Provence herbs. That said, we’re sharing a recipe for Seafood Pasta With Tomato and Crushed Olives by Alison Roman. It’ll yield 4 servings & take about 35 minutes to make.
About. The AOC of Costières de Nîmes has been reassigned from Languedoc to the Rhône Valley, but its stature as a giant among regions that score high on the price-to-quality ratio is constant. With a history of winemaking that spans centuries, Costières de Nîmes produces complex wines that beautifully display a seamless interplay between grape and terroir.
Château L'Ermite d'Auzan is an estate with a history dating back to the 11th century. It is currently owned by the Castillon family, who have been tirelessly working their 80 hectares of vineyards for four generations. Their south-facing vineyards have soil rich in sandstone and benefit from their proximity to the Mediterranean, which bestows cooling breezes on the vines so that they can bear fruit that perfectly balances ripeness and acidity.
In order to preserve the purity of fruit and terroir-driven characters in their finished wines, the family has converted to organic farming. They became certified organic in 2020 and are currently employing biodynamic practices as well.
