Tasting Notes: Hitting its stride with secondary and tertiary herbal notes like mint and orange rind. Well-balanced in tannin and acidity, with pops of vibrant red fruit, good depth, and a focused structure.
Pairing: Roast pork, beef, or veal, don't be afraid of using an herbed rub featuring rosemary or garlic. Even winter warming spices will pair really well with this wine. Go for couscous in a tagine with roasted squash.
2017 was the penultimate vintage made by Didier Montchovet, a biodynamic pioneer in Burgundy. As for Didier, he retired in 2020, and has sold his domaine (in 2018/2019) to Boris Champy of the highly esteemed Domaine des Lambrays!
