From: Maremma, Tuscany, Italy
Varietals: 89% Cabernet Sauvignon, 11% Cabernet Franc
Taste: This Cabernet is full of dark fruits and black cherry, complemented by black pepper spice and savory undertones of grilled herbs, earth, and smoke. A small percentage of Cabernet Franc highlights these spice notes. The tannins are noticeable, but pleasant and well-integrated. The finish is fresh and lifted; all the savory fruit and earth in harmony & lingering on the palate. Impressively, this wine is also only 13.28% ABV and is a breath of fresh air to many of typical “Super Tuscan” wines to grace our market. Delicious & a must buy for any Tuscan wine lover.
Pairing: The usual suspects include steak & braised dishes, but we also this next to a hearty vegetarian chili, grilled or roasted portobello mushrooms & sausage. Today, we’re sharing two recipes, the first by Mark Bittman for Braised Lamb With Anchovies, Garlic and White Wine & the second by Ali Slagle for a Cheesy, Spicy Black Bean Bake.
