From: Burgundy, France
Varietal: Chardonnay
Taste: Fine, tingly, mousse-like bubbles are followed by hints of crushed white pepper and minerality reminiscent of oyster shells. Lean and refreshing with bright lemon and lime acidity on the finish. Refreshing and polished!
Pairing: You'll get strange looks at the patisserie if you try to order a quiche for breakfast. Those, and other famed egg dishes like oeufs cocottes, are usually reserved for lunch and dinner- after all, the French take their egg dishes seriously; which is why we're sharing a Velvety Scambled Eggs recipe by J. Kenji Lopez-Alt for our pairing today. Make it for a weekend lunch & serve alongside this cremant, then prepare to laze happily into the afternoon.
About. This domaine is based in the village of Davayé, in the Mâconnais, and is jointly owned by Jean-Luc Terrier and Christian Collovray. Their 50 hectares of vineyards largely lie between the twin escarpments of Solutré and Vergisson and showcase the diverse terroirs of this region. The wines of Deux Roches are known for their drinkability and offer great value for money; the domaine is particularly known for its excellent Saint-Véran.
Christian and Jean-Luc were childhood friends that each grew up in a family of winemakers and shared a bond from a young age. They became closer still when they later married sisters Brigitte and Florence, also from a winemaking family. Following the success of Deux Roches, the friends now also boast a second property, Altugnac (Languedoc).
Always looking to achieve the highest possible quality for their wines, they achieved the High Environmental Certification in 2017 and are now working towards becoming certified organic. They produce a range of wines including Bourgogne Blanc, Macon-Villages, Saint-Véran, Saint-Véran Les Terres Noires and Pouilly-Fuissé Vieilles Vignes.
